Vineyard

Two medical professionals from Adelaide own the Doctors' Vineyard in Polish Hill River. Grey loam soils over sandstone and slate make up the profile, with the top soil littered with rock; hinting at just how tough the vines need to be to sustain growth and produce quality fruit. Polish Hill River is ideal for this style, with its high perfume and minerality, and this original 41-year-old Riesling planting was always destined for something special.

Vinification

Fruit is harvested in the cool of the night, de-stemmed, crushed and the must held on skins for 24 hours. The juice is then drained and gently pressed resulting in a fine free-run cut and a pressings component, kept separately in stainless steel tanks. Adopting a European style of winemaking, this wine is fermented on 'full solids', using a natural yeast flora present in the vineyard. A cool, temperature controlled fermentation is carried out over 10-14 days. Weekly lees stirring over six months adds another layer of complexity and texture to this reserve Riesling.

"From a Clare vineyard in the Polish Hill River sub-region, owned by a couple of Adelaide heart surgeons, the guys only make this wine in top vintages. 2022 is most certainly that. This is stunning stuff. A limpid lemon, the nose is all citrus – lemons and limes. Think a handful of fresh kaffir lime leaves. This is backed by spices and wet river stones. Finely balanced, squeaky clean, fresh and with amazing length, this is a brilliant Riesling. Fine, vibrant acidity helps drive the wine. It also has such incredible length and yet the intensity of flavour is maintained for the full journey. Wonderful. This will sail through the next 15 to 20 years in good cellars." - Ken Gargett

"No surprises to see Doctor’s Cut – a Riesling only made, according to the maker, in “exceptional” years – coming from the superlative 2022 vintage in the Clare Valley. It’s the vintage that keeps on giving some truly memorable wines, Rieslings in particular. Fruit for the Doctor’s Cut comes off an organic vineyard in the Polish Hill River sub-region owned by two Adelaide heart surgeons. In its just-bottled youth, it’s a quiet starter that values some air time. This won’t last long, but right now it allows the wine to open and expand. You’ll want to experience what follows. Polish River’s noted spice and intense fragrance immediately come into frame with apple blossom, spring flowers, citrus peel, green apple and lemongrass – a heady start. Tangy citrussy acidity rules and brings incredible energy to this wine. It will also see it on a long journey into the future. To taste, tart grapefruit pith chimes in with quince, citrus, apple and a layer of enduring spice and lemongrass in tandem with fine crystalline minerality.
